We said we’re flavour driven. Well, this coffee is testament to that.
Our first limited release is an anaerobic washed pineapple co-ferment from Hulia, Colombia by Rodrigo Sanchez Valencia.
Rodrigo selected a purple caturra for this coffee; a varietal with inherent sweetness. The coffee cherries are primed with ten yeasts and a mixture of local pineapples to kickstart fermentation process.
Co-ferments often face criticism in the industry, sometimes seen as a way to mask lower-quality coffee or create artificial flavours. But here, the varietal and process come together with intention, resulting in a cup that celebrates its natural fruit character and complexity.
This ones a summer-sipper. Vibe check: sunshine, a crystal clear ocean view, a cool breeze, ice cold piña colada in hand.
