Kicking off the year with a fun, fruit forward natural Colombia to ignite hopes for warmer days.

Ripe cherries make a couple of trips: first to Santa Monica for rigourous sorting to ensure the best cherries make the final cut, then they travel to La Pradera (Cofinet’s processing centre) where they are sorted further and processed. They undergo a 45 hour aerobic fermentation then dried on raised beds for 8 – 12 days, allowing the sugars to permeate the bean and slowly develop some deep complexity.

Sourced through Cofinet, we are pleased to have our first lot in from Jairo Arcila, a producer we have been long-time fans of. Whereas we’ve been accustomed to his more processey coffees, this natural Castillo’s refined and softer character appealed to us over the funkier Colombians on the table.  It’s tasting smooth: mango, blueberry compote against a sweet fudgey textured backdrop.
