Chelín - Geisha (Mexico, Hydro-Natural)

Finca Chelin has become an increasingly popular and available coffee in recent years. Enrique Lopez has been a champion for combining varietals seldom found in Mexico with novel processing – doing a stellar job putting high-end Mexican coffee on the map. 

The hydro-natural natural process is rarely found, and it yields incredible results. The coffee is picked when it’s very ripe and left in tanks overnight before being left out to dry in the sun until they start to shrivel like raisins. 

They are then nursed back to full hydration by being soaked in water overnight, leaving them looking plump and as if freshly picked. They are then naturally processed and pulped (treated as a normal natural) 

This staged approach aims to promote tartaric acidity and build complex tiers of sweetness. Add to this the floral and delicate virtues that Geisha brings and you’ve got yourself a pretty exceptional coffee stacked with flavour. 

This unique Mexican release is not one to be missed: melon sweetness, fragranced with orange blossom, with a sophisticated finish.
