This is special collaborative coffee we have worked on together with our long-time friends, Saf and Jemma at Beatnik in Edinburgh.
This is a H17 varietal that undergoes a special mix of anaerobic and aerobic natural process, nicknamed '777' in house at the farm.
La Chumeca was founded in 2014 by the Ureña family, now four generations into coffee farming. Martín and his sons work year-round to produce exceptional micro-lots, with the team growing to around 30 people during harvest. At the heart of the farm’s ethos is an ambition to produce high quality and environmentally conscious coffees. There’s no funny business going on, no infusions or co-ferments, just a deep understanding of the interplay of ph, brix, and oxygen in developing excellent naturals.
This is a top-shelf bag of beans that is bursting with tropical brightness and intense stone fruit sweetness.
