Gundikhan (Anaerobic Natural, India)
Sitting at 1,300 metres above the sea level, Gundikhan estate is tucked away in thick canopies of native trees in Karnataka in the south of India, with an abundance of large wildlife roaming throughout it's Bison, tigers, elephants and extensive birdlife all to boot.
The focus of the farm is two-fold, with an ecological focus and emphasis on quality of farming and processing. Abundant wildlife roams throughout the estate - bison, tigers, elephants and extensive birdlife all live and thrive here alongside coffee under dense canopies of native trees. Of course, running a coffee farm alongside these big and sometimes dangerous animals has a direct effect on coffee yield, so the increased cost associated is offset by the farms production of specialty coffee, which fetch higher premiums.
This coffee is sealed in barrels following sorting and fermented anaerobically for 72 hours, then dried for 25 days on raised bed and polyhouses.
This is hand on heart the best Indian coffee we have tasted - we were hit by a punnet of sweet red fruits, cherries, plums, strawberries, cheesecake, with a syrupy sweet cola finish.
